
Recipe: Fresh Mex Slaw
Serves 4, side dish
One of Barton Mountain Cafe's most popular recipes can now be made at home. This fresh slaw combines peppery radish, spicy jalapeno and a kick of lime, making it the perfect accompaniment for your favorite tacos.
Ingredients
- ½ lb coleslaw mix
- 1 radish, thinly sliced
- 1 jalapeno, thinly sliced
- 1 green onion, sliced
- 2 tbsp red onion, thinly sliced
- 1 tbsp cilantro, chopped
- 2 tsp canola or olive oil
- 4 tsp lime juice
- 1 tsp honey
- Pinch of cumin, salt, pepper
Place all veggies in a large bowl. In a small bowl mix together remaining ingredients. Pour over veggies and toss. Serve cold.
