Easy Burrito Bowl


  • 1 cup uncooked brown rice
  • 1 cup salsa
  • 3 cups lettuce, chopped
  • Juice of 1 lime
  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz) can black beans, drained
  • 2 Roma tomatoes, chopped
  • 1 avocado, diced
  • 2 Tbsp cilantro, chopped


Cook rice according to package instructions. Let cool and stir in salsa. Divide rice mixture into serving bowls and add all remaining ingredients.
