Grilled Veggie Kebabs


  • 1/4 cup extra-virgin olive oil or aqua faba
  • 1/4 cub balsamic vinegar
  • 2 cloves minced garlic
  • 1 Tbsp Italian seasoning
  • 16 cherry tomatoes
  • 12 mushrooms
  • 1/2 red onion, cut into chunks
  • 1 zucchini, cut into slices


Whisk oil, vinegar, garlic and seasoning in a large bowl. Add vegetables, toss to coat and marinate in the refrigerator for at least an hour. Thread onto skewers and grill, turning once, until tender, 12-15 minutes.
